Nicholas Balfe celebrates Salon’s 5th anniversary with five fellow London chefs

To celebrate the fifth anniversary of chef Nicholas Balfe’s Brixton-based restaurant, Salon, he is hosting a “celebratory feast” on 28 January with five fellow London chefs, including Som Saa’s John Chantarasak and Josh Katz of Berber & Q.

The event will see the six chefs (including Balfe) prepare and serve a five-course meal, plus snacks and an introductory cocktail made by the world's best bartender 2015, ‘Mr Lyan.’

At £50 per person, the lunch menu comprises:

  • Mr Lyan’s ‘Salon 75’ introductory cocktail made of Colombo gin, red ‘British citrus’, butter and Crémant, garnished with a slice of fresh fennel
  • Nicholas Balfe’s snacks of: January king cabbage taco with beef short rib, buttermilk and kraut; a celeriac skewer with blood orange and fermented chilli dip; and pheasant popcorn with sea buckthorn ketchup
  • Lee Tiernan from Black Axe Mangal - sweet and savoury doughnuts flavoured with Szechuan spices
  • John Chantarasak of Som Saa – cirpsy fermented pork belly, granny smith and sour leaf salad with sea buckthorn and an orange chilli dressing
  • Silo’s Dougie McMaster - his signature plant-based dish of chervil roots, whey and red flesh apple
  • Josh Katz of Berber & Q- barbecue mallard with smoked carrot, orange and pistachio
  • Ravneet Gill from Llewelyn - pre-dessert of lemongrass and rhubarb followed by a chocolate and chestnut choux bun

Balfe said: “Five years feels like such a huge milestone. So much has changed at Salon in that time, let alone the restaurant scene as a whole.

“The fifth birthday marks an occasion where we can all celebrate the work we’ve put in, and give thanks to everyone – guests, colleagues, suppliers, peers and our friends and family - who’ve helped make it happen.

“What better way to do so than by inviting some of my talented chef friends for a big party at our place. We can’t wait!”
