Japanese ramen specialist Kanada-Ya eyes spring 2018 for third London site

Kanada-Ya, a Japanese restaurant group specialising in authentic Tonkotsu ramen, has announced it will open a third UK site next year on Upper Street in the north London borough of Islington.

The company, founded by Kanada Kazuhiro in Yukuhashi, Japan, in 2009, opened its first London restaurant on St Giles High Street near Soho in 2014 followed by a second branch in Piccadilly a year later.

The 55-cover Islington restaurant will cover one floor with an open kitchen and will be open for lunch and dinner.

The menu will consist of the same selection of ramen as at its other sites in the capital with a few new additions such as gyoza, an extended sake menu and a small list of Japanese-inspired cocktails.

The noodles used in the kitchen are made on site with a machine imported from Japan using a specific brand of flour which the company says is enriched with the right protein content and alkaline salts to produce a bouncy, firm noodle capable of standing up to the rich broth.

Customers are able to request how firm they like their noodles, which are then cooked accordingly.

Kanada-Ya Islington is scheduled to open for business in March 2018.
