In this month’s issue, we’ve put a big emphasis on gluten-free and Coeliac UK Awareness Week (9-15 May). To that end, we’ve handed over the reins to celebrity Michelin-starred chef and Coeliac UK food ambassador Phil Vickery.

He says: “Together with Unilever Food Solutions, we’re calling for you to get involved in Coeliac UK Awareness Week by putting more gluten-free dishes on your menu and shouting about what you have to offer people with coeliac disease.

“While many choose to follow a gluten-free diet, for those with coeliac disease, it’s not a lifestyle choice – it’s the only way to manage a very serious medical condition, one that affects one in every 100 people in the UK.

“Gluten-free catering is not just a good thing to do, it can have a knock-on effect on profits too. The hospitality industry is still missing out on over £100-million-worth of business from people with coeliac disease and their friends every year.

“I’ve seen myself what a difference gluten-free options can make to revenue. I actually fell into gluten-free cookery over 12 years ago by happy accident. After a bad wheat harvest, we used rice flour in some Christmas puddings I was selling. When we explained the puddings were gluten-free, people began putting in bulk orders for them. They were so popular, I could hardly believe it.

“It was then that I realised just how difficult something as simple as enjoying a meal could be for so many. Whether they’re dining out, at school, or when they’re in hospital or care, people with coeliac disease don’t want to be made to feel different. They just want to enjoy their food – don’t we all?
