Coffee shop operators are missing one in seven food sales opportunities because of a lack of healthy options, a new report from UCC Coffee UK & Ireland has revealed.

The report finds that a quarter of customers eat and drink on coffee shop premises with breakfast products the most in demand. Cakes, sandwiches and pastries are also popular items despite the report also revealing that indulgence is on the decline.

The most sought after healthy menu item is fresh salad and one in three regularly buy healthier food with coffee, according to UCC.

UCC Coffee UK & Ireland chef ambassador and pastry chef, Sarah Hartnett, said: “People want to buy food and stay on site to eat. Operators aren’t just selling a coffee – they’re selling an experience. Venues that elevate the experience beyond coffee, with well paired, innovative and on-trend food offers, will cement their reputation as a great destination. And people will be willing to pay.”

UCC provides market research and insight alongside its total coffee solution.
