Carluccio’s to launch Italian vegetarian pop-up

Italian restaurant chain Carluccio’s is launching a vegetarian pop-up, ‘Cucina Verde,' on 23 October, in collaboration with cook, food blogger and writer Anna Barnett.

Taking over the first floor of its flagship Covent Garden restaurant, ‘Cucina Verde’ will feature over 20 Italian vegetarian and vegan dishes, including crostini al funghi (mushroom crostini), zucca con verdure arrostite (roasted butternut squash and other vegetables) and pasta e fagioli (thick pasta soup), alongside “displays of key ingredients reflecting the quality and provenance of the produce.”

As well as coinciding with the launch of Carluccio’s autumn menu, whereby “vegetables are the main event in many of the new dishes,” the pop-up also reflects the increasing number of vegans in Britain, which has grown by more than 360% in the past ten years.

Chief executive Neil Wickers said: “We have seen a huge demand for more vegetarian and vegan dishes, many from our millennial diners who are giving up or reducing their meat intake, either for environmental and/or health reasons.

“Our new menu firmly puts the spotlight on vegetables and the Cucina Verde has been created to further highlight the variety of delicious meat-free dishes we now have on offer across all our restaurants every day”.
